Greek Salad

For Father's Day I made a Greek salad. It was a recipe I added to my big black cookbook years ago but I had yet to try. 
For the record, I have lots of recipes just waiting in the shadows yet to be tried. I might have a little bit of problem, is there a group meeting anywhere for those of us that are addicted to collecting recipes and cookbooks? I might need to attend...
Ahem..
Back to the salad, it was amazing!! I was a little hesitant because I wasn't too fond of the dressing on just the lettuce leaves, but after adding the other ingredients to the salad, it was perfect! By far one the best salads I have ever made at home. So good in fact that I made it again a couple days later for just the Dude and I.

We even used the beautiful, yummy lettuce from our garden! 

Here is the recipe:

Greek Salad
Ingredients:
For the dressing:
1/4 cup red wine vinegar
2 tbsp. minced fresh dill
1 tsp. dried oregano
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
1/3 cup extra virgin olive oil 

For the salad:
Romaine lettuce
Sliced red onions
Sliced kalamata olives 
Grape tomatoes, halved
Cucumber, peeled and thinly sliced
Crumbled feta cheese

Directions: 
To make the dressing, in a small bowl, combine all the dressing ingredients. Whisk together until well combined.

To make the salad, add romaine lettuce (I just used the leafy green lettuce from our garden) to a salad bowl. Drizzle with the dressing and toss well to coat. Top as desired with red onions, kalamata olives, tomatoes, cucumber, and feta cheese. Store leftover dressing in an airtight container in the refrigerator, and shake well before using again.

Father's Day Weekend

Father's Day weekend was a fun weekend for us! 
So fun that I didn't take one picture, not even one of everyone at the end of the visit.
 I stole these following pictures from my Dad's phone. 
My parents and my younger brother with his cute little family came up to stay with us for a couple days.
They made it just in time to go to church with us. After we had a big Father's day dinner, and our friend who is working in Roberts for the summer joined us.
We went fishing on Monday, and of course the only one to catch a fish was my Father. I think that is why I just end up following him from hole to hole, at least he catches something. 
We ventured to the Rusty Lantern for dinner one night and homemade pizza the next.
We also played lots of games, watched movies, napped, talked, and snacked.
I was sad to have our weekend come to an end and watch them pile into the car and drive away. 
They should all just move up here already, agreed??

He was a good size Brown Trout, about 15 inches or so. Some of us ate it for breakfast the next morning. Delicious!
Oh, and Happy Father's Day Dad!! You are the BEST Father and I am so grateful you are my Father.

Dad found a Caterpillar hanging from the pine tree, which you can see right in front of my face, my cute niece almost ran into it when he called her over to check it out but stopped right in front of it. It is so fun to show her new things she hasn't seen before.

Bar J Wranglers

A couple weekends ago, we went with our good friends, to see the Bar J Wranglers. They are a singing cowboy group that sings old Western songs. I have seen them several times in Salt Lake during the winter months, but had yet to go to their ranch to have the wonderful chuck-wagon dinner they serve and hear them sing in their barn.

The Dude got all dressed up for the occasion.

This here feller was manning the biscuit station. He had several dutch ovens going full of biscuits for those wandering the ranch to eat. You could drizzle the biscuit with honey, which ended up all in my hair and on my shirt, typical.

These people are our dear friends!! They are wonderful people! Funny too!

I thought it was interesting what they used to decorate the barn with, old cowboy boots and one wall had old hats. 
Who do they belong to I wonder??

These cowboys make up the Bar J group, well minus one....

This one makes the group complete!
They put on a wonderful show, we most definitely will be back!

Peonies!!!

What better post to follow my Grandma then one about peonies, her favorite flower.

I have three peony plants, one white, one red, one pink.

Technically these is suppose to be the Benjamin Franklin Red, but I think this is more pink, don't you? Either way I still love it!!

Grandma

At the beginning of this week I got to spend time some quality with my Grandma. What a blessing it was!! 
She is just absolutely amazing. I loved being able to sit and listen to her tell stories of what happened in her life, her relatives, the pieces of furniture and knick knacks in her home, reading stories about my Grandpa to me. 
It made me think of the tapes she made of her reading children's books for us to listen to when I was younger, I wonder if my Mom still has those.....

I think I need to go back soon with a voice recorder so I can write down her memories. 
She is one in a million!!!

Wedding Day!

On May 30th, the Dude's niece got married!!
This day had two special meanings, not only did she get married, it was my Mother in-law's birthday!
What a wonderful birthday present (and a wonderful Mother in-law)! 
She got married in the Oquirrh Mountain Temple and then had a ring ceremony before the reception.

We got to see these wonderful people!!

And these two are just downright amazing!!
